Tea Tasting and Proper Tea Tasting Set

Part of the fun of learning about tea is participating in a tea tasting with formal tasting sets.

What is a tasting set, you ask?

A tasting set is usually made of porcelain, and consist of 3 pieces--a brewing cup, a brewing cup top, and a tasting cup.

The brewing cup has serrated openings on one side of the lip of the cup. The tea is placed in the brewing cup, hot water added, and lid placed on top. When the tea steeping is done, the liquor is poured into the tasting cup while holding the top on the brewing cup. The serrations allow the tea to pour out without any leaves getting in the tasting cup.

Then the leaves are dumped onto the upside down lid so that the person tasting the tea may examine the leaves by sight, smell and touch.

It is amazing to people who have never done a formal tea tasting before with the tasting set to see the change in the leaves once brewing is done. For instance, Oolong Teas explode into huge individual leaves once brewed, about the size of a bay leaf.
